Chocolate Oat Cake
A yummy, quick breakfast and fun alternative to oatmeal. Feels like having dessert!
ingredients:
- 1 banana
- 1/4 cup oats
- 1/4 cup cocoa powder
- 1/2 tsp baking powder
- 1 egg
- optional mix-ins - berries (fresh or frozen), chocolate chips
directions:
- Add all ingredients to a blender and blend until smooth
- Pour mixture into microwave safe bowl and mix in add ins
- Microwave for 2 - 2.5 minutes or until cake-like texture
- Top with yogurt, peanut butter, or desired toppings
Baked Oats
A twist to your standard bowl of oatmeal for the mornings you have more time on your hands
ingredients:
- 3/4 of a large banana
- 1 egg
- 1/4 cup milk of choice
- 1 tbsp maple syrup
- 1 tbsp peanut butter (optional)
- 1 tsp vanilla extract
- 1 - 1 1/3 cup oats
- 1 tsp cinnamon
- 1/2 tsp baking powder
- optional mix-ins - berries (fresh or frozen), chocolate chips
directions:
- Pre-heat oven to 350 F
- In a mixing bowl, mash the banana until smooth
- Whisk in eggs, maple syrup, peanut butter, vanilla extract and milk
- Fold in 1 cupt of oats, if mixture seems too wet, add in up to 1/3 cup of oats
- Mix in cinnamon and baking powder
- Pour mixture into oven safe bowl and add optional add ins
- Bake for 20 - 30 minutes or until achieves a cake-like texture
- Top with fruits and desired toppings
