Chocolate Oat Cake

A yummy, quick breakfast and fun alternative to oatmeal. Feels like having dessert!

ingredients:

  • 1 banana
  • 1/4 cup oats
  • 1/4 cup cocoa powder
  • 1/2 tsp baking powder
  • 1 egg
  • optional mix-ins - berries (fresh or frozen), chocolate chips

directions:

  • Add all ingredients to a blender and blend until smooth
  • Pour mixture into microwave safe bowl and mix in add ins
  • Microwave for 2 - 2.5 minutes or until cake-like texture
  • Top with yogurt, peanut butter, or desired toppings

Baked Oats

A twist to your standard bowl of oatmeal for the mornings you have more time on your hands 😎

ingredients:

  • 3/4 of a large banana
  • 1 egg
  • 1/4 cup milk of choice
  • 1 tbsp maple syrup
  • 1 tbsp peanut butter (optional)
  • 1 tsp vanilla extract
  • 1 - 1 1/3 cup oats
  • 1 tsp cinnamon
  • 1/2 tsp baking powder
  • optional mix-ins - berries (fresh or frozen), chocolate chips

directions:

  • Pre-heat oven to 350 F
  • In a mixing bowl, mash the banana until smooth
  • Whisk in eggs, maple syrup, peanut butter, vanilla extract and milk
  • Fold in 1 cupt of oats, if mixture seems too wet, add in up to 1/3 cup of oats
  • Mix in cinnamon and baking powder
  • Pour mixture into oven safe bowl and add optional add ins
  • Bake for 20 - 30 minutes or until achieves a cake-like texture
  • Top with fruits and desired toppings
